This is an easy and relatively fast bread recipe. It can also be shaped in a loaf form. This time I decided to make sandwich size rolls.
Ingredients:
2 cups lukewarm water
3 teaspoons of active dry yeast
1-2 tablespoons of butter (or coconut oil)
1 teaspoon of salt (Real salt or Kosher salt preferred)
1 cup buckwheat flour4 cups unbleached all purpose flour
1/2 cup sunflower seeds (optional)
Directions:
Dissolve yeast in warm water, let it activate while combining other ingredients. Melt butter and add salt . Add one cup of flour to the yeast/water mix. Gradually add butter mixture. While mixing with hand (or a bread mixer at low speed) gradually add the rest of the flour. It will take about 7 minutes by hand (3 minutes with a mixer) to combine all the flour and shape the dough into a slightly moist/sticky ball. Place it in a slightly oiled container (I use a teaspoon of olive oil), cover it with kitchen towel or a plastic wrap, and let it rise for about 1 - 1.5 hours at room temperature. Once doubled in size, shape it in a loaf form (yields 2) or small balls (6 -10) place on a parchment paper aligned baking sheet and let it proof for 1hour. Bake at 200C (400F) for 25 -30 minutes.
