Eggs with mushroom, spinach and homemade vitamin K2 Sauerkraut

Nutrituous breakfast with spinach and mushrooms

Quick nutritious breakfast

Ingredients:

1 tablespoon butter or coconut oil
5-6 mushrooms cut 
1 cup spinach leaves
2 eggs


Directions:

Melt butter in a pan over medium heat. Sauté mushrooms for 3 minutes, then add spinach. Cover and simmer for 2 minutes until spinach becomes soft. Add beaten eggs and cook another 2 minutes.

Tasty in combination with homemade sauerkraut (optional).
