This very simple salad is a combination of fruits and vegetables on hand. A nice combination of sweet, tart flavors of pomegranate seeds and mild tasting vegetables creates a surprising mix of flavors.
Ingredients:
1 cup pomegranate seeds
3 carrots
3 celery stalks
5 small radishes
1 apple
Dressing:
1/4 cup lemon juice (preferable freshly squeezed)
1/4 olive oil
salt and black pepper to taste
green onion rings to taste
Directions:
Thinly slice carrots, celery stalks, apple, and radishes. In a glass bowl combine sliced vegetables and pomegranate seeds together. Top with premixed dressing consisting of olive oil, lemon juice, salt, pepper and fresh green onions (optional).
