Oven baked chicken with carrots, onion, and celery

Oven baked chicken is a quick and delicious dinner in our family. It can be combined with vegetables on hand and takes less than an hour to prepare and serve. This recipe contains both chicken drumsticks and wings. For seasoning, freshly ground pepper, thyme, sage, rosemary, paprika or fresh garlic can be used.

Oven roasted chcicken

4 - 6 pieces of chicken, drumsticks and wings with skin preferred
2 - 3 tablespoons olive oil
2 carrots, diced
2 onions, halved
3 celery stalks, diced
salt and pepper to taste
available herbs - ex. thyme, rosemary, sage, and hint of turmeric (for beautiful color)


Preheat the oven at 420F / 210C. Rinse chicken pieces in a bowl of water with some salt added to the water then pat dry. Place chicken pieces and vegetables in a dutch oven or baking glass dish and rub with olive oil. Arranging a few vegetables under chicken pieces will allow all sides of chicken to become crispy. Sprinkle salt, ground pepper and selected herbs on top of the vegetables and chicken. Bake for 35 - 40 minutes in the preheated oven until vegetables are caramelized and chicken pieces are crispy.
