Carrot walnut salad is a very simple but juicy salad. It is very quick and easy to prepare and can be kept in the refrigerator to allow flavors to develop before serving.
Ingredients:
4-5 carrots, grated
1 peeled orange, cut into small clusters
1 small apple, cut into thin slices
1/3 cup walnut pieces
1 tablespoon olive oil
1 tablespoon fresh lemon juice
salt and black pepper to taste
fresh dill weed or basil, chopped
Directions:
Combine grated carrots, orange clusters, slices of apple, and walnut pieces in a medium bowl. Whisk olive oil, lemon juice, salt, and pepper in a small bowl. Toss salad with olive oil mixture and fresh herbs. Mix all of the ingredients, cover and let sit in the refrigerator for half an hour or overnight before serving.
