Potato, zucchini, and carrot gratin

Potato gratin is a flavorful baked vegetable dish that can satisfy appetite as a main or a side dish. It takes very little time to prepare and will cook quickly if vegetables are cut in very thin slices. Fresh herbs of your choice like basil or parsley combined with a favorite grated cheese will create a customized flavor of gratin.
Potato zucchini gratin

Ingredients:

3 medium to large potatoes, peeled and thinly sliced
2 medium zucchinis, peeled and thinly sliced
2-3 carrots, cut into strips
2-3oz or 60grams of grated cheese (Gouda, cheddar, or any other hard cheese available)
1 tablespoon ghee, butter or olive oil
1/2 cup whole milk
fresh herbs like scallions, parsley, thyme, or basil, finely chopped
salt and pepper to taste

Directions: 
Preheat the oven to 400F/200C. Spread butter, ghee or oil on the bottom of baking dish with raised edges.

Peel and thinly cut vegetables by hand or with the help of mandoline.
Gratin vegetables
Arrange a layer of sliced potatoes, zucchini, and carrots on the baking dish and top with finely chopped herbs and grated cheese. Repeat with second and third layer depending on the size of the baking dish. Season with salt and pepper. Finish by pouring milk over the top layer.
Potato carrot gratin
Cover with foil and cook for 25 minutes, then remove the foil and let it brown for additional 10-15minutes.
