Almond raisin cookies (Gluten Free)

This recipe makes simple and delicious gluten free almond flour raisin cookies which can easily replace classic oatmeal raisin cookies. Final dough has relatively thick and dry texture which can be formed into rounds by using a mason jar canning bands or cookie cutters.
Almond raisin cookies

Ingredients:

3/4 cup coconut oil
5-8 tablespoons of honey (with 5 tablespoons cookies are moderately sweet)
2 eggs
250 grams almond meal/flour (or 200 grams almond flour and 50 grams of coconut flour)
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup raisins

Directions:
Preheat the oven to 350F/ 180C. Line a baking sheet with a parchment paper. In a small bowl using a whisk or hand mixer blend coconut oil, honey, and eggs. In a large bowl mix dry ingredients including almond flour, baking soda, salt, and cinnamon. Add wet ingredients to flour mixture to form smooth and thick batter. At the end combine raisins into the batter.

Place a mason jar canning band on a baking sheet lined with parchment paper. Add and flatten about one tablespoon of batter inside a canning band. Carefully remove the canning band after forming each cookie. Bake for 15-20 minutes until golden brown.
