Wonderful medjool dates are in season and it is time to make naturally sweetened treats high in fiber and minerals. It takes only about 15 minutes to combine ingredients together and 30 minutes to bake in the oven.
Ingredients:
2 eggs
1 cup whole milk
5 tablespoons melted coconut oil
100 grams old fashioned steel cut oats
100 grams almond meal/flour
50 grams coconut flour
50 grams freshly ground flaxseeds
pinch of sea salt
20-25 pitted, chopped medjool dates (or more for sweeter treats)
Directions:
In a small bowl whisk eggs with milk and set aside. In a medium bowl combine dry ingredients together. Add coconut oil to dry ingredients and mix until the mixture is evenly crumbly, then add medjool dates.
At the end add egg mixture and mix all ingredients to form a smooth paste like batter.
For convenience, use muffin cups to bake and serve as the resulting cookies will be very moist and crumbly after baking. Bake at 370F for 30 minutes.
