Raisin oatmeal bites

Ingredients:

2 eggs
1/2 cup olive oil
1 cup plain yogurt
2 cups unbleached all purpose flour
1/2 cup almond meal (optional)
1/2 cup rolled oats
1 teaspoon baking soda
1/2 teaspoon sea salt
1/4 teaspoon ground fennel seeds (optional), helps nursing mothers to make more milk
1/4 teaspoon cinnamon (optional), to enhance sweetness
3/4 to 1 cup raisins

Directions:
Preheat the oven to 350F/180C. Whisk eggs, olive oil, and plain yogurt in a small bowl and set aside. In a large mixing bowl combine dry ingredients - flour, almond meal, baking soda, salt, spices, and oats. Add egg mixture to the bowl with dry ingredients and gently fold into smooth dough with hands or spatula. At the end mix raisins into the batter. Use a baking sheet with parchment paper or a muffin tray to form cookies. Bake for 30 minutes or until lightly brown.

Bon appetit!
